It’s no problem at all! Most ships carry food rations to be used in case of an emergency, and more rations are very easy to get (and they’re cheap) so they could well be eating those for breakfast.
Rations don’t taste very good, though, and the Ghost crew has access to other foods. Plenty of fresh ingredients are found in abundance on Lothal, as I’m sure you know, so they could be having jogan fruit, maize rolls or cereal with blue milk. It’s also possible, though not confirmable, that they could have picked up something else like bread, jogan fruit cake or, of course, space waffles.
So bad news: this would mean your character enlisted in 29 BBY. The Grand Army was founded in 22 BBY, and it indeed was made up of only clones and Jedi. It’s pretty much impossible for your character to have served in the Army. Sorry.
However, they could have served in the Judicial Forces of the Republic. The Judicials were like a peacekeeping force. All of them were militarily trained. The need for such a force decreased as the Clone Wars began and the Jedi got more involved, but you’ve got several years until that happens. Judicials attend the Judicial Academy before serving, and because Tarkin attended, we know that it’s been around for long enough for your character to do it too.

These are called holoprojectors. They can come in a bunch of different sizes, but they’re generally all called the same thing. There are some instances of handheld holoprojectors being referred to as holopads (which comes from the term holoprojector pads). If you’re talking about, for example, the ones the clones carry, it’s your choice which term to use.
On that note, I’ve been working on a list of vocabulary which will be linked in my blog description and home page when it goes up. If you or anyone else would like to suggest stuff to include, go ahead and do it! @pomrania especially, because you gave me the idea to do it in the first place.

Hmm… I suppose the first thing to consider is the incredible variation in different cultures on Coruscant. I’m not sure you could say that there’s even a singular Coruscanti culture, especially as the Empire rose and started introducing their policies of xenophobia. However, with your Imperial officers, you would almost certainly be dealing with the culture within the Empire itself. The Empire put a lot of effort into promoting ideals of minimalism, and would probably encourage a very simple wedding. I doubt anyone within the Empire would protest skipping the ceremony altogether.
The general culture of rich humans living on Coruscant doesn’t include any Coruscanti-specific marriage traditions (as in, they might still follow some from a religion or a homeworld other than Coruscant), but a lot of the stuff they did was very extravagant, simply because they could afford it. If your officers have rich family on Coruscant who have an influence on the wedding plans, it might turn out very differently from a plain old Imperial marriage.
Basically, neither human culture in the Empire nor Coruscanti High Human Culture included a special marriage ceremony. Following the former would result in a very simple ceremony or none at all, and the latter would result in the opposite, provided they had enough money to pull it off. I hope that’s helpful!
